Our Method

Flour, butter, time, and heat

No shortcuts or factory mixes enter our kitchen. Every loaf and pastry starts with whole ingredients and strict patience.

Before Sunrise

The espresso grinder turns on at six

The first ovens open shortly after the bakers arrive. Butter layers are folded by hand into cold dough blocks, resting in rhythm with the morning routine.

We simmer our vanilla syrups in copper pans and pull double shots into heavy stoneware mugs for the neighborhood commute.

Pulling double shots into stoneware

Butter is folded and chilled repeatedly to build fine pastry layers that shatter cleanly on the first bite.

Whole vanilla beans and unrefined sugars are heated in traditional copper pans, skipping industrial plastic pumps.

Single-origin beans roasted weekly are extracted precisely into heavy ceramic mugs kept warm for your arrival.

The Counter

Pull up a chair, grab a warm ceramic mug, and ask what just came out of the oven.
